Create a Nutritious Meal All in One Dish
A soup is defined as a liquid food made with a stock (quite often poultry or beef flavoring) and vegetables, with meat added on occasion, and usually highly seasoned. Soups can include stews, porridges, and other types of gruel, and quite often reflect ingredients and tastes of the region.
Serving up a bowl of bean soup will warm up even the coldest day, and fill your family with a good, nutritious meal that will stick with them a long time.
Bean soup is as easy as a little bit of preparation the night before, some cutting and chopping, and then having the patience to wait a few hours while it simmers and wafts a luscious smell throughout the house. You can feed at least six hungry people with this pot of bean soup.
You will need:
- A large, heavy pot for stove-top cooking, with lid
- 1 small bag of navy beans
- 1 ham bone, and additional chunks of leftover ham
- 1 potato
- 2 carrots
- 1 onion
- 1 T catsup
- Salt and pepper to taste
Preparation the Night Before:
- Place uncooked beans in colander and rinse with cold water.
- Sift through the beans and look for anything other than beans (very occasionally, you might find a small stone or a dark bean) and toss.
- Place beans in pot and cover with cold water.
- Soak beans overnight by placing lid on pot and setting aside until tomorrow.
Make Bean Soup:
- Drain water from beans and add new water, covering the soaked beans with at least 1 inch of water.
- Place ham bone in pot.
- Bring to a boil and then simmer for about 2 hours (beans will soften more and ham pieces will begin to separate from the bone).
- In the meantime, core and chop potato into 1/2” cubes, clean and slice carrots into thin slices, chop onion to similar size as potato cubes.
- After the 2 hours of simmering, remove ham bone and let cool, add the vegetables, catsup, and salt and pepper.
- Continue simmering.
- Once ham bone is cooled enough to handle, break away meat from bone and add back to the soup. Throw away bone.
- Simmer for about 1 more hour, or until vegetables are cooked.
- Serve with thick slices of bread, butter, and apple butter.
