Chicken Kiev is a classic Ukrainian chicken dish. Juicy and flavorful, it is sure to please both adults and children. Chicken Kiev is breaded chicken with a delicious herb butter in the center.
Ingredients and supplies:
- 2 boneless chicken breasts
- 2 ounces unsalted butter, room temperature
- 4 tablespoons chopped fresh parsley
- 2 tablespoons flour
- 1 tablespoon grated parmesan cheese
- 3 1/2 ounces dried breadcrumbs
- 1 egg
- 6 tablespoons vegetable oil
- Salt and pepper, to taste
- Frying pan
- Slotted spoon
- Shallow baking dish
- 3 small bowls
- Piping bag
Prepare the butter. Blend the butter with the parsley, garlic, salt, and pepper. This will be easiest when the butter is at room temperature. You need not use a blender; simply mix the butter with a spoon. Once the seasonings have been incorporated into the butter, transfer the mixture to a piping bag. If you do not have a piping bag, cut the corner off a small plastic bag, and transfer the butter into the bag.
Prepare the chicken. If using frozen chicken breasts, make sure that they are fully defrosted first. Use a sharp knife to cut a horizontal pocket into each chicken breast. Then fill this pocket with the butter mixture using the piping bag. Keep the openings in the chicken closed using toothpicks so that the butter does not run out of the chicken.
Prepare the breading. Pour the breadcrumbs and parmesan cheese into a bowl. Add salt and pepper to taste, and stir until well mixed. Pour the flour into a separate small bowl. Then crack an egg into a third bowl, and beat it well. Line up these three bowls to prepare for breading the chicken.
Bread the chicken. Roll each chicken breast in the flour. Then dip it into the beaten egg. Finally, roll in the breadcrumbs, which will stick to the egg.
Refrigerate the chicken. Place the chicken breasts into a shallow baking dish. Cover and place in the refrigerator for half an hour. This step will keep the butter from leaking out of the chicken as it is cooking.
Cook the Chicken Kiev. Heat the vegetable oil over medium heat in a frying pan. Cook each chicken breast for 5-6 minutes on each side until they are golden brown and fully cooked all the way through. Drain any excess oil by blotting with a paper towel. Alternatively, you can also bake the chicken, although the butter will be more likely to run out as it bakes.
Serve. Serve while still hot with salad, steamed vegetables, chips, or baked beans.
This delicious chicken dish can easily be doubled or even tripled. The seasoned butter inside the chicken melts as it cooks, acting as a sauce.
