Try This Homemade Gelato Ice Cream Recipe
Gelato is an Italian dessert similar to the ice cream we typically know. You may be wondering if there is a difference between gelato and ice cream. Gelato is usually denser than regular ice cream, making it more flavorful. It is made with milk, sugar, and eggs, plus other flavorings.

Melt the sugar. To begin this gelato recipe, cook a quarter cup of sugar (not the full cup of sugar) over medium heat, without stirring. When it begins to melt, stir until it completely melts and turns a deep golden brown. Then remove the pan from the heat, and dip it briefly into a bowl of ice water so it will stop cooking. After 5 minutes, return it to the heat.
Add other ingredients. Now add the milk, and cook over moderate heat until the sugar melts again and mixes with the milk. Then add the flavorings. For chocolate gelato, use a cup of cocoa powder. If you’re making chocolate gelato, also add 3 1/2 ounces of chopped bittersweet chocolate. Keep the mixture warm as you melt the chocolate.
Add the eggs. Use an electric mixer to beat the egg yolks with the remaining 3/4 cup sugar until the mixture turns thick and pale. Then whisk in the sugar mixture and the melted chocolate until the ingredients have combined.
Cook the mixture. Now, return to medium-low heat until the candy thermometer reads 140 degrees. Do not let it boil, or your gelato will not turn out right. Keep stirring 4 minutes more. Then let the mixture cool completely.
Freeze the gelato. Transfer the mixture to a homemade ice cream maker to freeze. The ice cream maker will help make sure ice crystals don’t build up. Gelato is best served right after it’s frozen, but you can keep it in the freezer for a month or so. However, ice crystals may form in your gelato during this period.
