Eggplants are originally from India and are large, edible, purple-skinned fruit. Eggplant is an acquired taste but if you do enjoy the taste of eggplant then you can enjoy many delicious meals. Eggplants bruise easily so there is a proper way to store them. Whether you purchased a few or several eggplants, I’ll explain the proper way to store them so that they won’t spoil.
If you’ve purchased a couple of eggplants to eat during the week, then storing them is easier than if you purchased a whole bunch of eggplants. To store a few eggplants, all you will need to do is place the eggplant into a perforated plastic bag and keep this in the refrigerator. The eggplant will stay fresh for up to a week in the fridge, so eat it some time within that time frame.
If you’ve purchased numerous eggplants that you won’t be able to eat before they spoil, then you’ll have to store them differently. You will first need to wash the eggplant. Wash it with either cold or lukewarm water.
The next step is to use a sharp knife and cut off both ends of the eggplant. Then peel the skin off of the eggplant with a vegetable peeler. Slice the eggplant just as you would slice a banana.
Before we begin the next step, I’ll explain why we have to do it. Fruits and vegetables have enzymes and bacteria in them that can ruin the taste and color of the food if it’s frozen without completing this next step.
Now you need to grab a big pot that’s suitable for boiling water. Add lemon juice to the water – about a half of cup of lemon juice per gallon of water. You’ll also need to fill up a big bowl with ice and water. You’ll put the eggplant in this once you are done boiling it.
Once the water has begun boiling, add the eggplant and let it sit in the boiling water for about five minutes. When the time is up quickly remove the eggplant from the boiling water and place the eggplant into the bowl of ice water to cool it off. Keep the eggplant in the water for an additional five minutes and then let it drain thoroughly to dry off.
Now that you have boiled, cooled and dried the eggplant you can place it into freezer bags and put the bag in the freezer. If properly prepared, this eggplant will stay good for up to six months in the freezer.
